Chloe’s Green Monster:
This was my first time trying coconut water and I loved it. Of course I had to do a taste test before adding it to my Green Monster, and immediately my body told me to down it right then and there. I refrained, but man that stuff tastes good and felt so hydrating going down. My new Green Monster was a fairly simple one, but rocked my socks off. It’s very light and refreshing, perfect for a hot summer’s day.
Here’s the recipe:
2 cups of spinach
1/2 frozen banana
1/2 cup coconut water
1/2 cup soy milk
sprinkle of flax (maybe 1/2 tablespoon)
That’s it! So simple, yet so good. Plus, it tastes even better since it’s in my alumni cup from the University I attended. Go Ducks!

Oooh! I just tried coconut water in a smoothie for the first time the other day. I totally agree, it’s SO good! Now I just have to try it with some spinach added 😉
