I am new to the Green Monster movement. At first I was skeptical. Because of the spinach? No. Because of most recipes calling for bananas! So, I began experimenting. My goal was a very simple GM that didn’t use banana, but still tasted like a ‘smoothie’ rather than a liquid salad. After a few days of tweaking ingredients, I came up with the perfect recipe for me (please forgive the crude measurements… I usually make these too early in the a.m. to bother with precise measurements).
*Two big hand fulls of spinach
*Three heaping spoon fulls of plain yogurt (I use soy yogurt)
*1 whole peach, peeled and cut into cubes
*1-2 tbs ground flaxseed
*plain soy milk or almond milk to taste
Put all ingredients in a blender and mix away! The smoothie will be naturally sweet with the tang of plain yogurt. So good!
