I’ve been drinking green monsters every day for a couple weeks now, and this morning I felt… Adventurous? So I decided to make a filling, vegan green monster. But I wasn’t paying attention to the proportions, and ended up with a delicious (albeit undrinkable) pudding-like result. It was fab! It also made it feel more like a “meal” to me, so I felt like I’d really eaten.
2-3 C of fresh baby spinach
2 Tbsp. plain hemp protein
1 Tbsp. ground flax seed
1 kiwi
1/2 medium avocado
1 large banana
1 C mango juice
I used a hand blender, and it turned into a light, soft pudding (custard?). Yum. I think it might work better with an actual blender, my little guy couldn’t quite demolish the kiwi seeds.
